Fresh Pear/Cranberry Tart For the dough: 1 1/2 cups flour 1/4 cup plus 2 tbsp superfine sugar 1/2 cup unsalted butter 1 egg A pinch of salt For the Filling: 1/4 lb Gorgonzola cheese 2 oz. softened cream cheese 1/2 cup sugar 2 egg yolks 1/4 cup heavy cream 2 tbsp cornstarch 2 firm, ripe pears, peeled, quartered, cored, sliced thin 2/3 cup chopped fresh cranberries 1. Combine flour,1/4 c sugar,salt. Add butter,1 egg and form dough. Chill 30 minutes. 2. In bowl cream together cheeses, sugar, yolk, cream,cornstarch and fold in the fruit. 3. Preheat oven 350. F 4. Cut dough into quarters and roll into rounds, Fill the center of dough with filling and fold ocer to partially cover the fruit. Transfer onto baking dish. Brush tops with yolk, sprinkle with remaining sugar. Bake for 30-40 min until set. Serve with a creamy custard. |
